Tasting Notes

Our journey begins at a weathered fence line bordering a field of fresh-cut hay, where the air hung heavy with the scent of buttery toffee and a handful of cherries tucked into a sun-warmed leather satchel. The palate moved us into the cool, quiet shadows of an antique leather workshop; here, the aroma of cured hides and aged timber meets the steam of a bubbling cherry cobbler cooling on a nearby window sill. A splash of water intensifies the sweetness, transforming the air into decadent flambéed cherries dripping with dark, caramelized sugar. The finish delivers the ultimate reward after a long day of hard work; a generous bowl of cherry cobbler a la mode, where the lingering heat of the day is finally softened by a sinewy, sophisticated grip of leathery oak tannins.
